WHAT IS KCBS?
Kansas City Barbeque Society (KCBS) was founded in 1985 in the United States as an organization dedicated to promoting competitive BBQ and preserving authentic preparation techniques. Today, KCBS is the world’s largest BBQ association, with more than 16,000 members and 450 annual competitions worldwide.
The organization sets global standards for meat judging, and the most prestigious competition is the Master Series, which includes: chicken, pork ribs, pork shoulder (pulled pork) and Brisket.
Competitions are held according to strictly defined rules, including inspection of raw ingredients, using only charcoal, briquettes, pellets, or wood for cooking, and anonymous judging conducted by experienced certified judges. KCBS judges undergo specialized training to evaluate food based on appearance, texture and tasteand each portion must be served in standardized containers.
KCBS plays a significant role in developing BBQ culture through educational programs and collaboration with local communities.
