Throughout the entire Sunday gathering, there will be only one topic – how to become the best in the world. Nothing will be hidden, everything will be on the table – from choosing the meat to its preparation before the competition, brining, injecting, and layered seasoning with a detailed explanation of spice selection, to the smoking process in various types of smokers and the selection and preparation of BBQ sauces to finish a dish worthy of a perfect result and the highest award.

We will prepare all the dishes that are part of the KCBS BBQ Master Series KCBS competitions. But that’s not all – for chicken, we’ll show how to prepare legs, thighs, and wings. We’ll demonstrate how to select and prepare the perfect St. Louis cut pork ribs, and give a detailed explanation of Boston Butt, its preparation, and the preparation of the muscle that wins competitions – the Money Muscle. Finally, there’s the king – Brisket. How do you select it, and what’s the best way to prepare it – Low & Slow or Hot & Fast? How do you make perfect Burnt Ends that, together with that perfect Flat, will bring the ultimate Grand Champion title.

Although this BBQ workshop will teach you how to become a world BBQ champion, it is tailored to absolutely all levels of knowledge. We will talk a lot about KCBS itself, competitions, judging, and boxing the food for judging. We’ll also talk about wood selection for smoking and how to organize the smoking process for the least amount of stress when turning food in to the judges.

And in the end, you’ll receive a diploma signed by the legendary Sterling Smith!!!!!!
